2 celery stalks, coarsely chopped

Celery may seem like an unusual ingredient to add to syrup, but our Green Gin cocktail combines it perfectly with fresh herbs and gin. If you prefer mocktail, try soda syrup.
Combine the sugar, 3/4 cup water, and celery in a small saucepan. Bring to a boil over medium-high heat. When the first bubbles appear, reduce the heat to medium-low and simmer for 5 minutes. Allow to cool, then strain. It is stored chilled for up to 1 week.Note: Nutritional analysis is given on a tablespoon.
