Celery Soup with Apples and Blue Cheese

Ingredients
1 head (1 1/2 pounds) celery, separated stalks
½ onion, finely chopped
1 teaspoon reduced-sodium chicken or vegetable broth
2 tablespoons butter
1 Granny Smith apple, peeled and finely chopped
½ cup halved
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup chopped flat-leaved parsley
¼ cup shredded blue cheese

Cut the celery into slices. cut into small pieces. In a large saucepan, cook the celery and onion with the broth, covered, until tender, 20 to 25 minutes.Meanwhile, melt the butter in a small skillet over medium-high heat. Cook the apples, stirring occasionally, until caramelized, about 10 minutes. Set aside.When cooking in batches, transfer the celery mixture to a blender and whisk until smooth, about 2 minutes per serving. Stir in half and season with salt and pepper. Pour the soup on plates and sprinkle with parsley, remaining apple and cheese.
