Cheddar-Beer Sauce Broccoli


12 oz broccoli florets (5 cups raw)
¼ cup beer
1 ½ tablespoons flour
¾ cup skimmed milk
¼ cup beer
¾ cup reduced-fat cheddar
1 tablespoon green onion
½ teaspoon grated lemon zest
¼ teaspoon kosher salt

To make

Put the broccoli in a double boiler. Steam under the lid for 4 minutes or until crisp. Place the broccoli in a large bowl.Whisk 1/4 cup beer and flour together in a bowl. Combine milk and 1/4 cup beer in a saucepan; bring to a boil. Add flour mixture; bring to a boil. Reduce heat; simmer 2 minutes. Add the cheddar, green onion, lemon zest and kosher salt. Pour over the broccoli.
