Chicken and Bean Burritos

Ingredients
¾ pound chicken breasts, cut into 1-inch thick slices
½ cup chopped onion
1 ½ teaspoons chili powder
½ teaspoon ground cumin
⅛ a teaspoon of salt
⅛ a teaspoon of freshly ground black pepper
2 teaspoons canola oil
½ cup canned low-sodium black beans, washed and dried
1 clove garlic, minced
2 (10-inch) flour tortillas
1 ounce shredded Monterey jack cheese (about 1/4 cup)
Cooking Spray
½ cup pico de gallo
¼ cup low-fat sour cream

Try also using this filling for tacos, quesadillas, or nachos. Adults can sprinkle it with jalapenos.
Combine the first 6 ingredients in a bowl; mix well.Preheat a large skillet over medium-high heat. Add the butter; whisk to coat. Add the chicken mixture; cook for 8 minutes or until the chicken is tender, stirring occasionally. Add the beans and garlic; cook for 2 minutes or until heated through, stirring frequently. Spread the chicken mixture evenly over the tortillas. Sprinkle each burrito with 2 tablespoons of cheese. Roll each burrito into a jelly roll.Preheat a large skillet over medium-high heat. Brush both sides of the burrito evenly with cooking spray. Transfer the burritos to the skillet; cook for 2 minutes on each side or until they are lightly browned. Cut the burrito in half. Top with pico de gallo and sour cream.
