Chicken and Guacamole Tostadas

Ingredients
1 ripe peeled avocado
1 cup plus 2 tablespoons finely chopped tomatoes, divided
3 tablespoons chopped fresh onion, divided
3 tablespoons fresh lime juice, divided
½ teaspoon salt, divided
1 small garlic clove, minced
1 tablespoon chopped fresh cilantro
1 tablespoon chopped jalapeno pepper, unseeded
2 cups shredded skinless and boneless chicken breast for grilling
¼ teaspoon smoked paprika
8 (6-inch) corn tostada shells
To make
Smoked paprika gives these chicken tostadas a rich, grilled flavor without cooking. Look for inshell tostadas (fried flat corn tortillas) next to flour and corn tortillas or in the Mexican food section of your grocery store. Serve with lime wedges.
Put the avocado in a small bowl; mash with a fork. Add 2 tablespoons tomatoes, 1 tablespoon onion, 1 tablespoon juice, 1/4 teaspoon salt, and garlic.Combine remaining 1 cup tomatoes, 2 tablespoons onions, 1 tablespoon lime juice, 1/4 teaspoon salt, cilantro and jalapeno; mix well.Combine chicken, remaining 1 tablespoon juice, and paprika; mix well. Spread about 1 tablespoon of guacamole on each tostada pan; top with 1/4 cup chicken mixture and about 2 tablespoons of salsa.
