Chicken-and-Squash Casserole

Ingredients
2 pounds yellow courgettes, sliced
1 pound zucchini, sliced
1 large onion, chopped
1 teaspoon salt
½ teaspoon pepper
1 can tomatoes, diced (14.5 oz)
4 cups chopped boiled chicken
1 can mashed chicken soup (10 3/4 ounces)
1 (8 oz) container of sour cream
⅓ cup chopped fresh basil
2 garlic cloves, minced
2 cups soft, fresh breadcrumbs
3 cups (12 oz) grated spicy cheddar cheese
⅓ cup (1 1/2 oz) grated parmesan cheese
To make
Place the first 3 ingredients in a large, microwave-safe bowl. Cover tightly with plastic wrap, bending a small edge to allow steam to escape. Cook in the microwave on high for 8 minutes or until the courgettes are tender; drain. Sprinkle with salt and pepper.Dry the tomatoes well, wringing them out between paper towels. Combine tomatoes, chicken, and the following 4 ingredients. Place one-third of each soup mixture, courgette mixture, breadcrumbs, and cheddar cheese in a lightly oiled 6-cup slow cooker. Repeat the layers twice. Sprinkle parmesan cheese on top.Cover and cook on high for 4 hours or until bubbles form and the edges are golden. Remove the lid and cook on high heat for 30 minutes. Allow to infuse for 10 minutes before serving.
