Chicken-Broccoli Mac and Cheese with Bacon

Ingredients

6 ounces raw large or regular pasta
3 cups chopped broccoli florets
3 slices bacon, coarsely chopped
12 oz skinless and boneless chicken breasts, cut into 1/2-inch thick slices
1 teaspoon kosher salt, divided
1 tablespoon minced fresh garlic
⅛ a teaspoon of ground turmeric
1 ¼ cups 1% low-fat milk
1 cup unsalted chicken stock (such as Swanson)
¼ cup plus 1 teaspoon all-purpose flour
5 ounces hot grated cheddar cheese (about 1 1/4 cups)

To make

A little turmeric improves the color; it's the kind of trick that makes you perceive the sauce as more cheesy than it actually is.
Preheat the grill to high heat.Cook the pasta according to the instructions on the package, without adding salt or fat. Add the broccoli to the pan during the last 2 minutes of cooking. Drain the water.While the pasta is cooking, place the bacon in a large nonstick skillet over medium-high heat; cook for 4 minutes or until lightly browned, stirring occasionally. Remove the bacon from the pan with a slotted spoon; leave 1 1/2 teaspoons of the filling in the pan. Sprinkle the chicken with 1/4 teaspoon of salt. Add the chicken to the filling in the pan; cook for 4 minutes. Sprinkle with garlic; cook for 2 minutes, stirring occasionally. Sprinkle with turmeric; cook for 30 seconds, stirring frequently.Combine the remaining 3/4 teaspoon salt, milk, broth, and flour, stirring with a whisk. Add the milk mixture to the pan; bring to a boil, stirring frequently. Cook for 2 minutes or until thickened. Add the macaroni mixture and 2 ounces of cheese; stir to coat. Sprinkle with the remaining 3 ounces of cheese and bacon. Bake for 2 minutes or until the cheese is melted and starting to brown.
