Chicken Cobb Salad

Ingredients
Cooking Spray
1 ½ pounds skinless and boneless chicken breast patties
¼ teaspoon salt
¼ teaspoon ground black pepper
8 cups mixed greens
1 cup cherry tomatoes, halved

2 tablespoons shredded blue cheese

To make
Bacon, blue cheese, avocado and chicken are all ingredients for the classic Cobb salad. Serve with a chilled summer soup or sandwich for a light and refreshing meal.
Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Sprinkle the chicken with salt and pepper. Transfer the chicken to the skillet; cook for 5 minutes on each side or until tender. Cut into 1/2-inch thick slices.Combine the herbs, tomatoes, avocado, and onion in a large bowl. Drizzle with the dressing of the greens mixture; stir gently to coat. Place approximately 2 cups of the green mixture on each of the 4 salad plates. Sprinkle each serving with 4 ounces of chicken, 1 1/2 teaspoons of cheese, and about 1/2 teaspoon of bacon.
