Chicken Curry Bar

Ingredients
1 tablespoon canola oil
1 large white onion, sliced vertically
2 garlic cloves, minced
2 pounds skinless and boneless chicken thighs, cut into 1-inch thick slices
2 teaspoons curry powder
1 teaspoon salt
1 cup unsalted chicken stock
1 cup light coconut milk
½ teaspoon ground red pepper flakes
½ cup toasted unsweetened coconut
½ cup toasted almonds, sliced
½ cup golden raisins
½ cup dried banana chips
½ cup green onion, thinly sliced
¼ cup chopped fresh cilantro
¼ cup thinly sliced mint leaves
8 lime wedges
4 cups pre-cooked brown rice
To make
Children will be happy to prepare their own dishes if you prepare a variety of delicious fillings. Pre-cook a large portion of brown rice; freeze a little to serve later.
Heat the oil in a large skillet over medium-high heat. Add the white onion and garlic; simmer for 5 minutes, stirring frequently. Add the chicken, curry powder and salt, and stir to coat. Cook for 7 minutes or until the chicken is fully cooked, stirring occasionally. Add the stock, coconut milk and pepper; bring to a boil. Reduce the heat to medium-low; simmer for 15 minutes or until the sauce thickens, stirring occasionally.Place the coconut chips, almonds, raisins, banana chips, green onions, coriander, mint, and lime wedges in small serving bowls. Place 1/2 cup rice in each of 8 shallow bowls; add about 3/4 cup chicken mixture to each serving. Serve immediately with the fillings.
