Chicken Mashed Potato Bowl

Ingredients
1 pound boneless and skinless chicken breasts, cut into 1-inch thick slices
1 teaspoon montreal meat seasoning
2 tablespoons olive oil
8 potatoes, peeled and quartered
1 teaspoon salt and pepper
½ cup butter
¼ cup milk
1 can of heated beef sauce
1 bag of grated cheese
1 can of warmed corn
To make
Step 1: In a shallow bowl, whisk together 1 egg and 1 cup of milk. Combine all the coating ingredients in another shallow bowl, pie dish, or shaker bag and mix well. Dip the chicken pieces in the egg mixture, then in a bowl and dip twice. Deep-fry in batches at 375 degrees until the chicken pieces are golden brown and completely cooked through. Dry on paper towels.Step 2: While the chicken is roasting. To make mashed potatoes: Put the potatoes and salt in a large saucepan and cover with enough water to cover the potatoes. Boil the potatoes until tender. Drain the water and add the pepper, butter and milk. Mash or whisk until smooth.Step 3: To assemble the potato bowls, Place a layer of mashed potatoes on the bottom of the pan. Top with corn, chicken pieces, sauce and cheese. Spread the ingredients evenly over 4 bowls.Yield: (4 servings)
