Chicken Skewers with Soy-Mirin Marinade

Ingredients
чашка cup of mirin (sweet rice wine)
⅓ cup low-sodium soy sauce
1 teaspoon dark sesame oil
1 ½ pounds skinless and boneless chicken breast halves, cut lengthwise into 1-inch thick strips
1 large red bell pepper, cut into 8 pieces
1 large green bell pepper, cut into 8 pieces
Cooking Spray
2 tablespoons toasted sesame seeds
3 cups hot boiled rice

Isaac loves Japanese-style grilled specialties, such as these chicken skewers in soy-mirin marinade. The marinade also goes well with salmon. Serve with sauteed green peas.
Combine the first 3 ingredients in a large bowl; add the chicken to the bowl and stir to coat. Let stand for 15 minutes, turning the chicken occasionally.Prepare the grill.Remove the chicken from the bag, reserving the marinade. Pour the marinade into a small saucepan; bring to a boil. Cook until reduced to 1/4 cup (about 5 minutes). Arrange the chicken and bell pepper on 8 (12-inch) wooden skewers. Brush the skewers with marinade. Place the skewers on a grate greased with cooking spray. Grill for 4 minutes on each side or until tender, occasionally smearing with the remaining marinade. Remove from the grill; sprinkle with sesame seeds. Serve with rice.
