Ingredients
2 teaspoons cumin seeds
½ teaspoon fennel seeds
1 tablespoon olive oil
1 ½ cups chopped onion
½ cup chopped carrots
½ cup chopped celery
3 garlic cloves, minced
4 ounces chicken and apple sausage, sliced
5 cups chicken stock or low-fat, low-sodium chicken stock
8 ounces sliced golden yukon potatoes
3 cups thinly sliced green cabbage
2 cups shredded cooked chicken breast (about 8 ounces)
2 cups sliced Granny Smith apples
1 tablespoon apple cider vinegar
¼ teaspoon kosher salt
¼ teaspoon ground black pepper

Chicken soup with cabbage and apple is the definition of satiety in a bowl. Juicy green cabbage is combined with wet shredded chicken, chicken sausage and broth-soaked potatoes. The tart, crunchy apple slices add a fruity touch to this German soup.
Preheat a large skillet over medium-high heat. Add the cumin and fennel; cook for 2 minutes, stirring constantly. Grind in a spice grinder or grind until smooth.Heat the oil in a roasting pan over medium-high heat. Add the onion, carrot, celery and garlic; cook for 6 minutes. Add the sausage; cook for 1 minute. Add the ground spices; cook for 30 seconds, stirring constantly. Add chicken stock and potatoes; bring to a boil. Cover, reduce heat and simmer for 10 minutes. Increase the heat to medium-high. Add the cabbage and other ingredients; cook for 3 minutes.
