Chicken Thighs with Cilantro Sauce

Ingredients

8 skinless and boneless chicken thighs (about 2 pounds)
½ teaspoon kosher salt, divided
2 tablespoons finely chopped shallots
1 large garlic clove, minced

Add the chicken to the skillet; simmer for 6 minutes or until lightly browned. Turn over; simmer 4 minutes or until chicken is tender. Place the chicken on a platter.Combine the remaining 1/4 teaspoon salt, shallots, and garlic in a mortar and pestle; grind the mixture into a paste. Combine the garlic mixture, coriander, and remaining ingredients. Spread 1 1/2 teaspoons of the cilantro mixture on each chicken thigh.
