Chicken with Sherry-Soy Sauce

Ingredients
Cooking Spray
4 skinless and boneless chicken breast halves (6 oz each)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
⅓ cup dry sherry
1 tablespoon sugar
2 tablespoons low-sodium soy sauce
2 tablespoons red wine vinegar
⅛ a teaspoon of crushed red pepper
1 teaspoon sesame oil
¼ cup green onion, thinly sliced
To make
Serve the Asian-style chicken with bagged salad greens and instant rice noodles for a light snack.
Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Sprinkle the chicken with salt and black pepper. Transfer the chicken to the skillet; cook for 4 minutes on each side or until lightly browned. Remove from the mold; keep warm.Add the sherry, sugar, soy sauce, vinegar, and red pepper to the pan; clean the pan to prevent browning. Bring to a boil; cook for 1 minute. Add the butter.
