Ingredients

½ cup chopped onion
1 ½ tablespoons honey
1 teaspoon ground cumin
⅛ a teaspoon of ground cinnamon
9 large garlic cloves, peeled
3 types of chili with french fries, canned in adobo sauce
1 lime
2 tablespoons olive oil, divided
1 (1 1/4 lb) boneless pork shoulder (boston ham), trimmed
¾ teaspoon kosher salt
½ cup low-sodium, fat-free chicken stock

The flavors of chipotle, lime, garlic, and spice waft through the house as Chipotle pork cooks in the oven over low heat. The result is tender, juicy, pitted meat that retains its smoky hue thanks to chipotle chili. Versatlie Chipotle pork is perfect on its own with rice, for sandwiches, tacos, or as a filling for baked potatoes.
Combine the first 6 ingredients in a food processor; grind to fine crumbs. Peel the lime and slice it over a bowl to allow the juice to stand out; discard the peel. Add the lime juice, lime wedges, and 1 tablespoon of olive oil to a food processor; beat until smooth. Transfer the roasting mixture to a zippered plastic bag. Add pork; seal. Marinate in the refrigerator for 1 hour.Preheat the oven to 325 degrees.Preheat a small roasting pan over medium-high heat. Add 1 tablespoon of oil to the skillet; toss to combine. Remove the pork from the bag; leave the marinade. Sprinkle the pork with salt. Add the pork to the skillet; saute for 8 minutes, until lightly browned on all sides. Remove the pork from the pan. Add the broth and marinade reserved for the marinade to the pan; bring to a boil, scraping off the pan to avoid browning the pieces. Return the pork to the pan; cover and bake at 325 ° C for 2 1/2 hours or until the pork is fork-soft. Chop the pork; pour the sauce over it.
