36 wonton wrappers

1 ½ cups (6 ounces) grated spicy low-fat cheddar cheese
1 cup chopped cooked shrimp
1 cup chopped toasted bottled red bell pepper
1 cup bottled chipotle salsa
½ cup chopped green onion

This quick appetizer takes on the smokiness and zest of a commercial salsa. And it becomes even easier if, instead of making homemade cakes, you bake purchased wrappers from wonton in mini muffin tins. You can prepare all the ingredients the night before (keep the filling in the refrigerator and the cups at room temperature), then preheat the finished cups in the oven just before serving.
Preheat the oven to 350 degrees.Place 1 wonton wrapper in each of the 36 mini muffin cups coated with cooking spray, pressing the wrappers against the sides of the cups. Bake at 350 ° C for 7 minutes or until they are lightly browned. Store wontons in muffin cups.Combine the cheese with the rest of the ingredients and add about 1 tablespoon of the cheese mixture to each wonton cup. Bake at 350 ° C for 6 minutes or until the cheese is melted. Remove from muffin tins. Serve immediately.
