½ cup light brown sugar
½ cup granulated sugar
1 ½ cups mashed ripe bananas (from 2 bananas)
2 large eggs
½ cup sour cream or plain Greek yogurt
1 teaspoon vanilla extract
½ cup chopped pecans or walnuts, toasted and chilled

Transfer the dough to the prepared baking pans. Bake in the preheated oven until the toothpick is almost clean (moist but not soggy), 45 to 55 minutes for 2 loaves, or 1 hour to 1 15 minutes for 1 loaf. Cool completely in a large skillet.
