Preheat the oven to 350°F.Put the apples, sugar, flour, cinnamon, and vanilla in a large bowl, stirring constantly. Set aside.Cut each pre-sliced cinnamon roll in half and roll out into ⅛ - inch-thick pieces.Place the flattened cinnamon rolls on the bottom of a lightly oiled pie dish, leaving 5 pieces for the top. Pour the apple mixture into the pie dish.Place strips of cinnamon rolls on top of the cake to create a grid pattern.Bake the pie for 25 minutes or until the apples are soft and the crust is golden brown.
