Classic Mashed Potatoes

4 pounds reddish-brown potatoes, peeled and cut into 1-inch-thick cubes
6 tablespoons unsalted butter
½ cup low-fat 2% milk
½ cup low-fat sour cream
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

This creamy, lush, healthy for children mashed potatoes is obtained from butter, milk and light sour cream. If you want to try something a little different, replace a few potatoes with celery (also known as celery root). Most children like the sweet taste, and celery is rich in vitamins. To make the most lush potatoes, without lumps, you should buy a food mill or potato masher. You won't be disappointed with the results.
Put the potatoes in a large saucepan; cover with water. Bring to a boil; cook for 15 minutes or until tender. Drain the water.Put the potatoes through a meat grinder or potato masher in a large bowl. Add the butter, stirring occasionally, until it melts. Add the milk and other ingredients.Tip: If you want to make mashed potatoes a few hours earlier, just keep them warm in a double boiler over very low heat. Keep in mind that you may need to add some milk before serving if the consistency becomes too thick.
