1 teaspoon vanilla extract

1 ¼ cups barley flakes
1 cup old-style oatmeal
⅔ cup of dried goji berries

These homemade fruit-filled bars with a nutty flavor are perfect for an after-school snack. Packed with antioxidants and superfoods like coconut, almonds, and goji berries, these healthy portable bars taste much better than the ones you'll find in the store. Make a portion at the beginning of the week and carry this hearty snack with you when you run out of energy.
Preheat the oven to 350 degrees. Combine almond oil, honey, olive oil, vanilla, and salt in a microwave-safe bowl. Reheat in the microwave on high power for 1 minute or until bubbles form. Combine the cereal, oatmeal, goji berries, almonds, and coconut in a medium bowl. Drizzle the barley mixture over the almond butter mixture; mix well to coat. Place in an 11-inch x 7-inch baking dish greased with cooking spray. Sprinkle with sesame seeds, pressing down to make them stick. Bake at 350 ° C for 10 minutes or until cooked through. Cool completely in a baking dish.
