Combination Fried Rice

Ingredients
3 tablespoons vegetable oil, divided
2 large eggs, lightly beaten
½ cup diced onion
½ cup diced bell pepper
1 cup chopped cooked meat, poultry, or shrimp
½ cup frozen English peas
3 cups cooked rice
¼ cup soy sauce
1 teaspoon asian chili garlic sauce
Garnish: chopped green onions
To make
To prepare this fried rice, use whatever meat you have on hand. Hot chili-garlic sauce adds piquancy to the dish, and after opening it, it can be stored in the refrigerator indefinitely.
Preheat 1 tablespoon Heat the oil in a large skillet or wok over medium-high heat for 1-2 minutes; add the eggs and mix gently for 1 minute or until smooth. Remove the eggs from the pan; chop.Heat the remaining 2 tablespoons. Heat the oil in a skillet; add the onion and bell pepper and saute, stirring, for 3 minutes. Add the chopped cooked meat and peas; stir-fry for 2 minutes. Add the rice, soy sauce, and chili-garlic sauce; stir-fry for 5 minutes or until completely warmed through. Add the eggs. Decorate if desired.
