Corn-and-Lima Bean Salad

Ingredients
3 cups fresh corn kernels (6 cobs)
1 tablespoon olive oil
1 cup fresh lima beans*
¼ cup diced toasted red bell pepper
1 tablespoon fresh basil leaves, cut into thin strips
1 tablespoon lemon juice
¾ teaspoon salt
¼ teaspoon dry ground red pepper flakes
To make
Saute the corn kernels in the preheated oil in a large skillet over medium-high heat for 3 minutes or until soft; add the Lima beans and cook for 2 minutes. Remove from heat and let cool for 10 minutes.Combine the Lima bean mixture, bell pepper, and the following 4 ingredients in a large bowl. Cover and refrigerate for 1 hour.* you can substitute 1 cup of frozen Lima beans, thawed.
