Couscous Tabbouleh

Ingredients
1 cup of water
¾ cup raw whole-grain couscous
½ teaspoon salt
2 cups halved grapes or cherry tomatoes
1 ¾ cups chopped, peeled cucumber
1 cup chopped red onion
½ cup chopped fresh flat-leaved parsley
½ cup chopped fresh mint
¼ cup fresh lemon juice
2 tablespoons extra virgin olive oil
¼ teaspoon freshly ground black pepper
To make
In a medium saucepan, bring 1 cup of water to a boil and gradually add the couscous and salt. Remove from heat; cover and let stand for 5 minutes. Transfer to a medium bowl and whisk with a fork. Add tomatoes and other ingredients. Serve immediately or refrigerate, covered, for 1 hour to allow the flavors to blend.
