Crab-stuffed Grilled Bell Peppers

Ingredients
6 medium red, orange and / or yellow bell peppers
1 ½ tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
¾ pound fresh lumpy crab meat
¾ cup toasted panko
3/4 cup chopped fresh parsley
½ cup finely chopped fennel bulb
9 tablespoons mayonnaise
¾ teaspoon lemon zest
1 ½ teaspoons fresh lemon juice
Lemon wedges to serve

Preheat the grill to high heat (450 ° to 500 °). Cut off the tops of the peppers, leaving the tops; remove and discard the seeds. Drizzle the pepper with oil, salt and pepper. Saute the peppers and tops on all sides for 2-3 minutes or until the pepper tips are clearly visible and softened, but retain their shape.Combine the crabs and the following 6 ingredients in a large bowl; mix gently. Spread the crab mixture evenly over the peppers. Bake the stuffed peppers on the grill, covered, for 5 minutes. Place on a platter and serve with lemon wedges.
