Cranberry, Apple, and Walnut Sauce

Ingredients
1 cup sugar
¾ cup fresh orange juice (from about 3 oranges)
½ cup white wine
1 cinnamon stick
2 cups diced peeled Granny Smith apples
1 ½ teaspoons minced peeled fresh ginger
⅛ a teaspoon of ground red pepper
1 pack fresh cranberries (12 oz.)
1 tablespoon grated orange zest
½ cup coarsely chopped walnuts, toasted
To make
Combine it with a roast. Prepare for 2 weeks in advance. Frozen cranberries will do, too.
Combine the first 4 ingredients in a large saucepan; bring to a boil. Cook for 3 minutes or until the sugar is dissolved, stirring frequently. Add the apple, ginger, pepper, and cranberries; bring to a boil. Reduce the heat and simmer for 35 minutes or until the sauce thickens. Remove from heat; add zest. Cool; add the walnuts.
