Cranberry Brie

1 round brie 8 inches thick (about 2 pounds)
3/4 cup dried cranberries or sweetened dried cranberries
¾ cup chopped pecans
3 tablespoons light brown sugar
¼ cup honey

This Cranberry Brie recipe is made by sprinkling a circle of buttery Brie cheese with a shiny mixture of cranberries, pecans, brown sugar, and honey.
Cut the rind off the top of the Brie, leaving a 1/2-inch border. Place the Brie on a microwave-safe plate.Combine cranberries, pecans, and sugar; sprinkle with brie. Drizzle with honey. Cover and refrigerate until tender.Reheat in the microwave on HIGH power for 1 1/2 to 2 minutes or just until the cheese is softened. Serve with crackers and sliced pears.For fun: If you can't find a two-pound serving of Brie, buy 4 8-ounce servings of Brie. Spread the filling evenly over 4 servings and microwave 2 servings at a time over HIGH heat for 1 1/2 minutes. For an interesting serving, place the Brie on a serving tray.
