Creole Red Snapper

Ingredients
1 tablespoon olive oil
¼ cup chopped onion
¼ cup chopped green bell pepper
1 clove garlic, minced
1 can unsalted whole tomatoes (14 1/2 oz), peeled and chopped
2 teaspoons low-sodium worcestershire sauce
2 teaspoons red wine vinegar
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
Pinch of hot sauce
4 red snapper fillets (6 oz.)
Fresh basil sprigs (optional)
To make
Heat the oil in a large nonstick skillet over medium-high heat until it becomes hot. Add the onion, green bell pepper and garlic; saute until soft.Add the tomatoes and the following 6 ingredients. Bring to a boil; add the fillets, sprinkling the tomato mixture over the fish. Reduce heat; cover and simmer for 12 minutes or until the fish separates easily when pricked with a fork.Garnish with basil sprigs if desired and serve immediately.
