Ingredients
Cooking Spray
½ cup chopped green onion
2 cups chilled mashed potatoes
2 tablespoons grated extra-spicy cheddar cheese
⅛ a teaspoon of salt
⅛ a teaspoon of freshly ground black pepper
1 toasted and crumbled bacon slice, cut from the center
¾ cup panko (Japanese breadcrumbs)
To make
Just the thought of your mother making these delicious little brownies in a cast-iron skillet should make your mouth water. It's doubtful that Mom used panko breadcrumbs, but you'll be happy with the improvement, as it makes potato cakes taste delicious and crunchy.
Preheat the oven to 425 degrees.Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the green onions to the pan and cook for 2 minutes or until tender, stirring occasionally. Remove from heat.Place the mashed potatoes in a medium bowl. Add the onion, cheese, salt, pepper and bacon. Divide the potato mixture into 6 equal portions, forming each into a 1/2-inch thick patty. Put the panko in a shallow dish. Roll the patties in breadcrumbs. Place the patties on a baking sheet greased with cooking spray. Bake at 425 ° C for 12 minutes. Gently turn the patties over; bake for another 12 minutes or until golden brown.
