Crumb-Topped Apple Pie

Ingredients
1 cake puff pastry recipe
6 tablespoons melted unsalted butter
¼ cup light brown sugar
1 ¼ cup all-purpose flour
3 pounds Granny Smith apples (about 6 large), peeled, cored, and cut into 1/2-inch thick slices
¾ cup sugar
1 tablespoon lemon juice
½ teaspoon ground cinnamon

To add texture and extra sweetness to the apple pie, sprinkle the apples with a sweet crumb mixture of flour, butter, and brown sugar. Surprise your in-laws and everyone else in the family with this most delicious addition to a traditional baking recipe. This will be your new apple pie recipe.
Roll out the pie dough on a lightly floured surface into an 11-inch diameter circle. Place in a 9-inch-diameter pie dish and trim the edges so that they protrude 1 inch. Fold the dough so that the edges are double thick; shape to decorate. Place in the freezer for 15 minutes.Preheat the oven to 350ºF. Line a foil-lined baking sheet with edges and place it on the bottom rack. Combine the butter, brown sugar, and 1 cup flour in a medium bowl. Pinch with your fingers until large crumbs form. Put the bowl in the freezer.In a large bowl, combine the apples, sugar, lemon juice, cinnamon, and remaining 1/4 cup flour. Stir to coat and let stand for 10 minutes, stirring occasionally to allow the sugar to dissolve. Spread the mixture over the pie crust, spreading the apples as tightly as possible.Place the cake on a baking sheet and bake for 35 minutes. Sprinkle the remaining crumbs over the apples and bake until the filling is golden brown, another 40-50 minutes. Allow to cool on a wire rack before serving.
