¾ cup (4 oz) diced smoked turkey ham (such as Jennie-0)
½ cup chopped onion
⅛ a teaspoon of freshly ground black pepper
¾ cup (3 oz) grated Swiss cheese, divided
1 cup fresh spinach leaves
1 cup low-fat cottage cheese
½ cup condensed skim milk
¼ cup (1 oz) grated low-fat cheddar cheese
2 large eggs
2 large egg whites
½ cup all-purpose flour (about 2 1/4 ounces)
1 teaspoon baking powder

This turkey and spinach custard pie without crust is very filling and easy for the waistline - the perfect brunch recipe to share with your girlfriends. The filling includes small pieces of smoked turkey ham, onions, leafy spinach, grated cheddar and Swiss cheese.Sprinkle the Swiss cheese on the pie dish before adding the ham and egg mixture. Preheat the oven to 350 degrees.Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the ham, onion, and pepper to the pan; simmer for 4 minutes or until the ham is lightly browned.Sprinkle 1/4 cup grated Swiss cheese on a 9-inch pie dish coated with cooking spray. Top with the ham mixture.Combine remaining 1/2 cup Swiss cheese, spinach, and the next 5 ingredients (with egg whites) in a large bowl; whisk to combine.Lightly pour the flour into a dry measuring cup; smooth with a knife. Combine the flour and baking powder in a small bowl, stirring with a whisk. Add the flour mixture to the egg mixture, stirring with a whisk until smooth. Pour the egg mixture over the ham mass. Bake at 350 ° C for 45 minutes or until a knife inserted in the middle of the quiche comes out clean.
