Cucumber-Lime Infused Gin and Tonic

Ingredients
6 persian cucumbers, halved (about 1 pound)
8 lime zest strips (2 1/2 inches long)
1 ½ cups gin
½ cup fresh lime juice
1 lime, thinly sliced
5 cups chilled tonic water
To make
Prepare the gin mixture beforehand or let it sit at room temperature for 3 hours.
Cut 4 cucumbers into 1/4-inch thick slices (about 2 cups). Combine the sliced cucumber and peel in a large measuring cup or bowl. Add gin. Cover and refrigerate for 12 hours and up to 3 days.Pour the cucumber mixture into a jug; add the juice. Slice the remaining 2 cucumbers; add to the jug with the chopped lime. Add tonic water just before serving. Serve in Collins glasses with ice.
