Cucumber Salad with Spicy Tahini Dressing

Ingredients
For refueling:
¼ cup tahini
2 tablespoons water
1 tablespoon sambal olec chili paste
1 tablespoon toasted sesame oil
1 tablespoon fish sauce
1 tablespoon fresh lime juice
1 teaspoon peeled fresh ginger, minced
½ teaspoon kosher salt
For the salad:
2 English cucumbers, sliced and quartered
¼ cup chopped fresh cilantro
¼ cup chopped fresh mint
¼ cup chopped almonds

This simple vegetable side dish combines the rich nutty taste of tahini with toasted sesame oil, fish sauce and fresh herbs, giving the dish a unique flavor.
