Cucumber Smoothies

Ingredients
2 cups cold plain yogurt (low-fat, low-fat, or whole milk)
2 ½ cups sliced cold cucumbers (any variety), plus 4 slices
2 ½ tablespoons coarsely chopped fresh dill
2 ½ tablespoons coarsely chopped fresh basil
2 ½ tablespoons coarsely chopped fresh mint leaves
2 ½ tablespoons lemon juice
¾ teaspoon fine sea salt
Approximately 1 1/2 cups cold soda or carbonated water

Yogurt drinks are popular in the Middle East and South Asia. We love smoothies with cucumber puree and herbs, as well as soda. If the cucumber peel and seeds are tender, they do not need to be removed.
Whisk the yogurt, chopped cucumbers, herbs, lemon juice, 3/4 cup ice cubes, and salt in a blender until smooth.Pour the cucumber puree into 4 12-ounce tall glasses. Fill the glasses with soda and stir. Add more ice if you like, and garnish with cucumber slices.Prepare ahead of time: follow step 1, infuse for up to 4 hours in an airtight cooler; stir well before use.Note: A nutritional analysis is provided for each serving using low-fat yogurt.
