Cumin, Honey, and Mint-Marinated Lamb Chops

Ingredients
¼ cup chopped fresh mint
1 tablespoon balsamic vinegar
2 teaspoons ground cumin
1 teaspoon dry mustard
2 teaspoons honey
½ teaspoon salt
½ teaspoon freshly ground black pepper
8 lamb loin chops, about 1 inch thick (4 oz each), trimmed

The traditional combination of lamb and mint goes to a new level thanks to balsamic vinegar and honey. The natural sugar found in honey helps caramelize grilled chops.
Combine the first 7 ingredients in a small bowl, mixing well. Arrange the lamb in a single layer on a shallow dish; rub the spice mixture evenly over both sides of the lamb. Cover and refrigerate for 4 hours.Cook on the grill.Place the lamb on a grate greased with cooking spray. Roast on the grill for 4 minutes on each side or until the desired degree of readiness. Serve immediately.
