Ingredients
1 turkey weighing 12 to 15 pounds
2 tablespoons ground red pepper flakes (optional)
4-5 liters of vegetable oil
Side dishes: fresh sage, parsley, thyme sprigs, kumquats with leaves

Remove the giblets and neck and rinse the turkey with cold water. Dry the cavity well; dry it. Place the turkey on a roasting rack; allow all liquid to drain from the cavity (20 to 30 minutes). If desired, rub the outside of the turkey with red pepper.Pour the oil into a propane-fueled turkey fryer 10 to 12 inches from the top; preheat to 375 degrees over medium-low heat according to the manufacturer's instructions. Carefully lower the turkey into the hot oil using the rod.Roast for 1 hour or until the meat thermometer inserted in the turkey breast reads 170 °. (Keep the oil temperature at 340 °.) Remove the turkey from the oil; drain and cool slightly before slicing. Decorate if desired.
