Dressed-up Tomato Soup

Ingredients
1 28-ounce can diced tomatoes with italian seasoning
1 26-ounce can of undiluted tomato soup
1 32-ounce container of chicken stock
½ teaspoon freshly ground pepper
For the filling, if desired: sour cream; chopped fresh parsley, basil, green onion or rosemary; croutons; fresh grated parmesan cheese; grated lemon zest
To make
Add a little spice to the canned tomato soup, mixing it with canned tomatoes, diced Italian style, chicken broth and freshly ground pepper. If desired, pour a spoonful of sour cream and chopped fresh parsley over the top before serving.
Chop 1 can of Italian seasoned tomatoes (28 oz) 3-4 times in a food processor or until they are cut into small cubes. Combine the tomatoes; 1 can of tomato soup (26 ounces) undiluted; 1 container of chicken stock (32 ounces) and 1/2 tsp of freshly ground pepper in a roasting pan. Cook over medium heat, stirring occasionally, for 10 minutes or until completely warmed through.Before serving, we poured a spoonful of sour cream over the soup and sprinkled it with chopped fresh parsley. Other delicious additions include sliced fresh basil, sliced fresh green onions, sliced fresh rosemary, croutons, fresh grated parmesan cheese, and grated lemon zest.For testing purposes only, we used diced Progresso tomatoes with Italian herbs.
