Ingredients
½ cup (1 stick) unsalted butter
1 cup granulated sugar
¾ cup brown sugar
½ cup sour cream
2 large eggs
2 teaspoons ground cinnamon
1 ½ teaspoons vanilla extract
4 apples, peeled and thinly sliced (about 5 cups)
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
To make
Making this simple apple pie requires just one mixing bowl and a few basic ingredients, but when baked, it turns out to be a deliciously dense, moist pie that you'll want to cook over and over again. This pie is more juicy and sticky than light and fluffy, so it goes perfectly with a scoop of ice cream. We recommend using gala, Fugi or honeycrisp apples, as they will preserve well in the pie and add a nice apple flavor — you can even use a mix of all three! Keep in mind that this pie turns out to be a dark color (baking in a dark pan will give it a richer shade) partly due to the brown sugar and the amount of cinnamon in the dough. Place in the oven after 25-30 minutes; if the edges of your pie are browning quickly, cover the pan with aluminum foil for the remainder of the pie's baking time.
Preheat the oven to 350 ° FPut the butter in a large mixing bowl suitable for a microwave oven; reheat in the microwave at 20 to 30 second intervals until it melts. Combine granulated sugar and brown sugar. Add sour cream, eggs, cinnamon, and vanilla; beat until combined. Place the apples in a bowl; stir until they are completely coated with the butter mixture.Sprinkle the apple mixture with flour, baking soda, and salt; mix well until all the flour is absorbed. Pour the batter into a 9x13-inch greased baking dish.Bake for 55 minutes, or until a toothpick inserted in the middle of the pie comes out clean. Cover loosely with aluminum foil in the middle of baking, if it seems that the pie is browning too quickly. Chill for 15 minutes before slicing and serving.
