This simple method of grilling mussels gives a steamed mussel dish the classic flavor you crave, thanks to garlic butter and lemon sauce made with fresh herbs, but with a delicious smoky base. Serve warm, off the grill, with slices of toasted bread for a divine seafood dinner.
Combine the butter, parsley, green onion, tarragon, lemon juice, and salt in a small bowl; set aside.Preheat the grill to high heat (450 ° F to 500 °F). Arrange the mussels, oil, and garlic in a 14-inch x 11-inch disposable aluminum dish.In a 20-inch x 13-inch disposable aluminum skillet, make a dozen dime-sized holes on one side. Place the wood shavings on top of the holes and place the pan with the wood shavings on the grill directly over the flame. Heat until the chips start to smoke, about 10 minutes. Place the foil-wrapped mussel pan on a wire rack next to the wood-chip pan. Cover both molds tightly with aluminum foil. Cook on the grill, covered, until the mussels are uncovered, about 15 minutes. Discard unopened mussels.Place the mussels in a large bowl and drizzle with the oil mixture from the pan. Sprinkle with herb mixture; serve with lemon wedges.
