Endive Salad With Oranges and Goat Cheese

Ingredients
Vinaigrette
1 cup extra-virgin olive oil, preferably Spanish
1 whole head of garlic, top cut off
¼ cup sherry vinegar
1 ½ tablespoons chopped shallots
¼ teaspoon salt
¼ teaspoon pepper
Salad
20 belgian endive leaves
40 orange slices (4 oranges)
2 ounces goat's cheese
2 ounces chopped marcona almonds
Chopped green onions

In this elegant salad recipe, endive leaves are garnished with fresh oranges, goat cheese and baked garlic sauce.
Preheat the oven to 400 degrees. Pour the olive oil into a small baking dish with the garlic. Bake for 30-35 minutes or until the garlic cloves are tender.Remove from the oven and separate the cloves; squeeze to extract the garlic pulp. Peel off the skin. Combine the garlic cloves, vinegar, shallots, salt and pepper in a blender until smooth.On each of the 4 plates, place 5 endive leaves in the form of circles. Add 2-3 orange slices to each endive leaf. Sprinkle each slice with goat's cheese, and top with a few slices of almonds. Drizzle with about 1 tablespoon of vinaigrette with roasted garlic (you'll have more) and garnish with chopped green onions.
