1 loaf (about 1 pound) of strong handmade bread
6 eggs
1 cup low-fat milk (1% or 2%)
2 teaspoons vanilla
1 teaspoon ground cinnamon

We love this French toast for kids created by Cindy Bates. Regular French toast may be raw in the middle, but the smaller cubes provide a crisper surface.
Cut the bread into 1-inch-thick slices. Cut off the crusts; cut the bread into 1-inch-thick cubes. In a large bowl, whisk together the eggs, milk, vanilla, and cinnamon. Add 2 cups of bread cubes and stir to combine.Lightly oil a 10-to 12-inch nonstick skillet. Place the skillet over medium-high heat. Remove the bread cubes from the mixture, shaking off any excess liquid. Place the cubes in a hot skillet and cook (adjust the heat if necessary), turning as needed, until golden brown, about 5 minutes. Keep warm.Repeat to soak and fry the remaining cubes. Discard the remaining egg mixture.
