Ingredients

Cooking Spray
½ cup enoki mushrooms
1 tablespoon grated peeled fresh ginger
2 cans of chicken stock (14 oz each) fat-free and lower in sodium
1 teaspoon low-sodium soy sauce
½ cup finely chopped green onion
2 tablespoons chopped fresh basil

If you are looking for a soup that will cure all diseases, look no further. A bowl of ginger, mushrooms and main soup is even tastier than the classic chicken noodle recipe.
Preheat a large saucepan over medium-high heat. Brush the mold with cooking spray. Add the mushrooms and ginger; simmer for 2 minutes or until the mushrooms are lightly browned. Add chicken stock and soy sauce. Bring to a boil.Remove the pan from the heat; add the onion and basil. Serve immediately.
