Fresh Lima Beans

Ingredients
2 cups fresh lima beans
1 tablespoon olive oil
2 teaspoons red wine vinegar
⅛ a teaspoon of salt
½ cup grape tomatoes, cut into quarters
¼ cup chopped kalamata olives
2 tablespoons chopped parsley
To make
Top the fresh Lima beans with tomatoes and kalamata olives, and top with a red wine vinaigrette.
Simmer the Lima beans in boiling water for 20 minutes or until tender. Rinse with cold water; drain. Combine olive oil, red wine vinegar and salt. Add the beans, grape tomatoes, olives and parsley; mix well.
