Fresh Mango Pie

Ingredients
1 pack sugar-free peach-flavored gelatin (0.3 oz)
¾ cup mango nectar, divided
½ teaspoon grated lime zest
4 cups chopped peeled ripe mango (about 4 medium mangoes)
1 shortbread pie crust (such as kibler), 6 oz.
½ cup frozen whipped topping, no fat, defrosted
Lime zest (optional)
To make
Delicious, sweet, ripe mangoes are the key to this recipe. Buy mangoes for 3-4 days in advance and let them ripen on the kitchen table. The mango will ripen when it gives in to a little pressure.
Combine the gelatin and 2 tablespoons of mango juice in a large, microwave-safe bowl. Let stand for 5 minutes. Reheat in the microwave on high power for 20-30 seconds or until the gelatin is dissolved, stirring once. Add remaining mango juice and lime zest; refrigerate 5 minutes. Add the mango, stirring gently to separate the slices and coat evenly with the gelatin. Spoon the mango mixture onto the pie crust. Cover and refrigerate for at least 4 hours or until the gelatin is set. Sprinkle each serving with whipped powder. Garnish with lime zest if desired.
