Fried Crappie

Ingredients
24 crappie fillets (about 6 pounds)
4 ½ cups cornmeal
¾ cup all-purpose flour
1 tablespoon salt
1 ½ teaspoons black pepper
3 cups milk
Vegetable oil
Lemon wedges (optional)
Tartare sauce or ketchup
To make
Wash the fish thoroughly in cold water, dry and set aside.Combine cornmeal, flour, salt and pepper in a thick paper bag. Put 6 fish in a bag at a time; shake until they are covered with a light glaze. Dip the fish in the milk to moisten; return the fish to the bag so that it is slightly coated. Deep-fry in preheated oil (375°) until the fish comes to the surface and is golden brown; drain. Repeat the procedure until all the fish is fried.Place the fish on a warm serving platter. Garnish with lemon wedges if desired. Serve with tartare sauce or ketchup.
