Fried Rice with Broccoli and Eggs

Ingredients
3 cups small broccoli florets
4 large eggs
2 tablespoons water
1 tablespoon vegetable oil, divided
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
4 cups cooked long-grain rice, chilled
½ cup grated carrots
¼ cup low-sodium, fat-free chicken stock
2 tablespoons low-sodium soy sauce
2 teaspoons dark sesame oil
¼ teaspoon salt
¼ cup green onion, thinly sliced
To make
Roasting rice is a great way to quickly and easily turn leftover rice into a dish. It is important to keep the rice cold so that it does not become sticky during cooking; the oil covers the cooled grains and prevents lumps from forming.
Cook the steamed broccoli, covered, for 2 minutes or until it is crisp-tender; rinse with cold water. Drain; allow to cool.Combine the eggs and 2 tablespoons of water. Heat 1 teaspoon of vegetable oil in a large nonstick skillet or wok over medium-high heat. Add the egg mixture; cook for 30 seconds, stirring constantly, or until the omelette is softened. Remove the egg mixture from the pan.Add 2 teaspoons of vegetable oil to the pan. Add the ginger and garlic; stir-fry for 30 seconds. Add the rice; stir-fry for 3 minutes. Add broccoli, carrots and broth; cook for 1 minute. Add the boiled eggs, soy sauce, sesame oil, and salt; stir-fry for 1 minute or until completely warmed through. Sprinkle with green onions.
