Ingredients

1 cup granulated sugar, plus more for rolling out cookies
3/4 cup butter, room temperature
1 egg
3 tablespoons molasses
2 cups sifted flour
1 teaspoon baking soda
1 ½ teaspoons ground ginger
1 teaspoon cinnamon
½ teaspoon salt
½ teaspoon ground cloves
½ teaspoon freshly ground nutmeg
1 cup powdered sugar
1 teaspoon lemon juice

We love the soft texture of this ginger cookie with icing and bright spice flavor. Ginger icing cookies are perfect for gifts and sharing cookies for Christmas.
Preheat the oven to 350 degrees. In a large bowl, beat 1 cup granulated sugar and butter until light and fluffy, about 3 minutes. Mix with egg and molasses.In a medium bowl, combine the flour, baking soda, and spices. Add to the butter mixture and mix well.Pour the granulated sugar into a shallow bowl. Break off pieces the size of walnuts from the dough and roll them into balls; roll the balls in sugar. Place on greased baking sheets and bake until golden brown, about 10 minutes. Transfer to coasters to cool.Meanwhile, prepare the icing: mix the powdered sugar with 1 tablespoon of water and stir until smooth, then add the lemon juice.
