Garlicky Grilled Cheese with Bacon and Spinach

Ingredients
½ teaspoon olive oil
2 large garlic cloves, thinly sliced
4 cups fresh spinach leaves
4 cups fresh arugula leaves
4 slices of bacon, halved in the center
8 slices of rustic Italian bread (1 oz each)
2 ounces grated partially low-fat mozzarella cheese (about 1/2 cup)
2 ounces grated fontina cheese (about 1/2 cup)
To make
Eat grilled cheese without feeling guilty! Garlic flavor goes well with cheese, bacon and herbs.
Preheat a large skillet over medium-high heat. Add the butter; stir to coat. Add garlic to skillet; simmer 1 minute. Add the spinach and arugula; stir until wilted. Remove the spinach mixture from the pan. Return the skillet to medium-high heat. Add the bacon; cook until crisp. Remove the bacon.Spread the cheese, bacon slices, spinach mixture, and remaining 4 slices of bread evenly over 4 slices of bread.Preheat a large skillet over medium-high heat. Place the sandwiches in the skillet with the filling; transfer to a plate. Cook for 2 minutes on each side.
