Ingredients
1 english cucumber, peeled and diced
4 large tomatoes, peeled and diced
1 green bell pepper, peeled and diced
1 red bell pepper, peeled and diced
1 sweet onion (e.g. Vidalia), finely chopped
4 garlic cloves, minced
¼ cup red wine vinegar
2 tablespoons lime juice
3 cups spiced vegetable juice (e.g. V8)
Salt and pepper
¼ cup chopped basil
¼ cup chopped flat-leaved parsley
To make
Gazpacho soup is the perfect cool summer dish. This is a chilled tomato-based dish with a filling of other vegetables such as peppers, onions, cucumbers and green capsicum. If you're looking for a cold soup, look no further than our gazphaco recipe.
Combine cucumber, tomatoes, bell pepper, onion, garlic, vinegar, lime juice, vegetable juice, salt and pepper in a large bowl. Transfer half of the mixture to a food processor or blender, whisk until smooth, and return to the bowl. Mix well.Add the basil and parsley; refrigerate for at least 2 hours to allow the flavors to show. Season with salt if desired.
