Ginger-Pear Preserves

Ingredients
6 cups diced ripe Bosk or Bartlett pears (approximately 1 3/4 pounds)
¾ cup chopped pitted lemon (1 large)
¼ cup pear-flavored liqueur
1-2 tablespoons grated peeled fresh ginger
4 cups sugar
½ cup water

A jar of this jam is suitable for neighbors, friends and colleagues. Pack this dish in a nice shape. Serve with English muffins, crackers, or as a seasoning for baked ham.
Combine the first 4 ingredients in a large saucepan. Add sugar and water; bring to a boil. Reduce the heat and simmer for 15 minutes. Remove from heat; cover and let stand for 12 hours (do not refrigerate).Bring to a boil, uncovered, over high heat. Reduce the heat and simmer for 1 hour and 15 minutes or until thickened, stirring occasionally. Arrange 1 cup of jam in each of 4 sterilized 8-ounce jars. Cover with lids and let cool upside down on a wire rack. Cool it down.Note: Jam will be kept in the refrigerator for up to six weeks.
