Glazed Pork with Fresh Plums

Ingredients
2 (1 1/4 pounds) pork tenderloins
1 teaspoon salt
½ teaspoon freshly ground pepper
2 tablespoons olive oil
½ large red onion, sliced 1/4-inch thick
3 medium plums, cut into quarters
3 tablespoons white or plain balsamic vinegar
3 tablespoons plum jam
1 teaspoon fresh thyme leaves

A quick meal doesn't have to start with cooking. This savory sweet dish of glazed pork with fresh plums will be served in just 30 minutes.
Preheat the oven to 400 degrees. Sprinkle the pork with salt and pepper. Saute in preheated oil in a large nonstick skillet over high heat for 3-4 minutes on each side or until browned. Add the onion and plums. Bake for 15 minutes or until the meat thermometer inserted in the thickest part shows 145 °.Transfer the pork, onion, and plums to a serving platter, leaving a drizzle in the pan. Cover the pork loosely with aluminum foil and let it stand for 10 minutes.Meanwhile, combine the vinegar and canned food with the filling; cook over medium-high heat, stirring constantly, for 3 to 5 minutes or until slightly thickened. Remove from heat; add thyme. Drizzle with the pork and plum mixture.
